In collaboration with the prestigious Maison Kaviari France, Rumari presents an exquisite Caviar Discovery Dinner featuring the finest range of caviar through a curated degustation menu.

With more than 40 years of experience and savoir-faire, Maison Kaviari France is a name synonymous with excellence in the realm of gastronomy, sourcing its products to renowned Michelin-starred chefs across the globe. As one of the first caviar houses to adopt sustainable practices and ethical sourcing, Maison Kaviari works exclusively with sturgeon farms that prioritises the well-being of the fish and conservation of the species, offering a distinctive assortment of artisanal caviar while upholding eco-responsibility.

Set against the breathtaking view of Jimbaran Bay, the Caviar Discovery Dinner at Rumari invites guests to discover the distinctive flavours, aromas, and textures of artisanal caviar, as Culinary Director Chef Gaetan Biesuz showcases his expertise in curating a menu that highlights the caviar’s nuanced flavours. The dinner is hosted by an expert from Maison Kaviari, guiding guests through the caviar degustation and providing a deeper understanding of the intricacies and craftsmanship behind each variety.

The culinary voyage of the evening commences with the Ahi Tuna Carpaccio, paired with Transmontanus caviar, a delightful presentation that enchants diners with its buttery texture and subtle, woody notes. Following this captivating opening, the journey continues to the Prawn Chawan Mushi graced with the addition of Baeri caviar, exhibiting an iodised aroma and a balanced saltiness reminiscent of the sea.

Continuing this symphony of flavours, the Java Burrata Tortellini features the Oscietra caviar, marked by its amber to golden tones as well as its subtle marine and nutty hints. Stepping onto the scene with its olive green and golden hues, Kaviari’s Kristal caviar elegantly enhances the Gindara and Asparagus, unveiling its rich and complex flavours and revealing the aroma of fresh almonds, intermittent hints of honey, and a lingering floral aftertaste.

The pinnacle of this exquisite dining experience arrives with a sweet epilogue: the Manjari 64% Chocolate, complemented with cashew nuts, creamy mascarpone, tangy passion fruit, and luscious coconut. As the dinner draws to its conclusion, an enchanting surprise awaits — an enigmatic Caviar Surprise meticulously crafted by the ingenious hands of the chef.
