Rumari, the fine dining destination nestled within Raffles Bali, is delighted to announce the launch of its new menu, crafted by Culinary Director Chef Gaetan Biesuz.
The new menu at Rumari offers a choice of between two gastronomic experiences: a 7-Step or 9-Step Journey, designed to take guests on a culinary voyage through the diverse regions of Indonesia. Each course pays homage to a specific region within the archipelago and incorporates local ingredients from artisanal producers of the area, in line with Rumari’s 80/20 rule in which 80% of the ingredients are sourced locally while the remaining 20% are imported by necessity.
Some of the menu items in the degustation dinner include sous-vide organic duck egg from Brebes with coconut cream and Kristal caviar, Lombok sea bream and pumpkin tagliatelle in woku sauce, Tokusen wagyu beef and foie gras in rendang spice from Minangkabau, and Munti Gunung cashew nut texture with kele kele honey.
In addition to the delectable dishes, our sommelier has meticulously curated an exquisite wine selection to perfectly complement each course, comprising of the classic and premium options. As a member of the Krug Ambassade, part of an international network of unique ambassadors reflecting the spirit of the Krug Champagne, Rumari is honoured to offer the prestigious Krug Grande Cuvee as the introductory wine for the first course within our premium package, setting the tone for an unforgettable dining experience.
For guests seeking an alternative to the wine offer, Rumari presents an inventive cocktail pairing to accompany each course. The curated cocktail menu is thoughtfully inspired by Indonesia’s natural diversity, delving deep into the indigenous flavours, herbs, and spices that define the Indonesian culinary landscape, infusing them into each carefully crafted cocktail.
The 7-Step Journey begins at IDR 1,850,000++ per person, while the 9-Step Journey starts at IDR 2,150,000++ per person.
